Method :
Cook the prawns in boiling water, then shell and devein and cut into
half lengthways. Chop the onions and crush the garlic. Heat the oil in a
pan and saute the onion and garlic for 3-4 minutes. Then season with
cayenne pepper, salt and freshly ground black pepper and add the prawns.
Stir for 30 seconds then transfer to a serving dish and keep warm.
To
make the sauce: chop the onions, green peppers and tomatoes. Heat the
oil in a saucepan, add the onion and saute for 2-3 minutes. Then add the
green pepper and tomato and continue to stir over a low heat for a
further 3 minutes. Add the tomato sauce, soya sauce and 300ml of cold
water and bring to the boil.
Season to taste with salt and freshly ground black pepper and allow the
sauce to boil slowly for about 20 minutes. Mix the cornstarch with a
small quantity of cold water and stir into the sauce to thicken
slightly. Pour over the prawns and serve immediately.
