Shrimp Fritters Recipes

Ingredients :

12 oz small shrimp, shelled, deveined

1 egg

1/2 cup water

1 tsp fish sauce

3/4 cup flour

1/2 tsp salt

freshly ground black pepper, to taste

2 small shallots, finely sliced

1/2 small red chili, seeded and finely minced

1/3 cup peanut or corn oil for frying

Method :

Lightly process half of the shrimp in a food processor, or pound with a mortar and pestle. Cut the remaining shrimp in half lengthwise. Beat the egg with the water and fish sauce. Place the flour in a mixing bowl, and gradually beat in the egg water mixture. Season with salt and pepper and thoroughly stir in the processed shrimp paste. If the mixture is very thick, add more water a little at a time.

The batter should have the consistency of thick yogurt. Fold in the remaining sliced shrimp, the shallots, and the minced chili. Heat the oil in a large skillet or an electric fry pan, and pour in about 2 tbsp of batter at at time. Fry until golden, turn and fry the other side. Do not crowd pan. Remove to paper towels to drain. Serve as a dish side.
