Stuffed Pigeon with Job's Tears and Ginseng Recipes

Ingredients :

1 pigeon

50g job's tears

a few slices dried pearl clam

1 stalk fresh ginseng

1-2 cup chicken broth

Thickening Glaze

1 tbsp cornflour

2 tbsp water

Method :

Blanch pigeon in boiling water for 5 minutes. Soak job's tears and dried pearl clams separately for a few hours. Slice fresh ginseng thinly. Stuff job's tears and fresh ginseng inside the pigeon. Put the pigeon in a clay double boiling pot. Pour in hot broth. Add the remaining ginseng and dried pearl clams. Double boil for about 2 hours until tender. Transfer pigeon on a dish and strain the liquid. Bring the liquid to the boil again. Thicken with cornflour solution. Pour on top of the pigeon and serve. Double boiling pigeon will conserve most of the flavor and nutrients. It is believed to be the healthiest cooking method for soup.
