Heat oven to
450F (230C). Line two 14-inch pizza pans with dough as directed in Pizza
Dough recipe. Drizzle each dough with 1 tbsp olive oil. Set aside about
24 of the pepperoni slices to use later as garnish. Sprinkle the
remaining pepperoni slices evenly over the two doughs. Sprinkle about
half of 1/2 cup Parmesan cheese over each pie. Combine tomato sauce,
oregano, anise seeds and garlic and pour about half of this mixture over
each pie, spreading it evenly. Cut Mozzarella cheese slices into strips
about 1 inch wide. Put half of these strips on each pie and sprinkle
each with about half of the remaining 1/2 cup Parmesan cheese. Drizzle
each pie with 1 tbsp olive oil and trim edges with the slices of
pepperoni you set aside. Bake about 25 minutes or until crust is well
browned and filling is bubbling well. Serve hot.
