Roasted Vegetable Pizza Tomato Tinged Tofu Recipes

Ingredients :

Pizza Crust (your choice)

1 loaf French or Italian bread (16-20" long), cut in half width and lengthwise

1 French baguette (18-22" long), cut in half width and lengthwise

1 prebaked pizza shell (15" diameter), thawed to room temperature

3 pita breads (6" diameter), sliced around the outer edge to form 6 equal rounds

Tofu Pâté

1/2 pound firm regular tofu, rinsed, patted dry, and crumbled

2 tbsp tomato paste

2 tbsp extra virgin olive oil

1 tbsp tamari

1 tsp ground fennel (or dried basil)

1 tsp dried oregano

1 tsp minced garlic

1/8 to 1/4 tsp cayenne pepper

salt to taste

ground black pepper to taste

Veggies

2 cups very thinly sliced (or finely chopped) mixed vegetables

1 tbsp extra virgin olive oil

Method :
  1. Preheat the oven to 400F. Place the crust on a dry baking sheet (or pizza pan or baking stone) and set aside.

  2. Place all the pâté ingredients in a food processor and blend into a smooth paste. Spread the mixture evenly over the crust.

  3. Toss the vegetables with the olive oil until they are evenly coated. Distribute the vegetables evenly over the top of the pâté and press them in lightly (so they don't fall off).

  4. Bake until the vegetables are lightly browned, the tofu is hot, and the crust is crisp, about 10-15 minutes.

This is a long name for a very simple dish. French bread is sliced in half, spread with a well seasoned tofu pâté, topped with your choice of seasonal vegetables, and baked to golden perfection. Now who said healthful food is boring ?

Good vegetables choices include (but are not limited to) onion, zucchini, red or green bell pepper, roasted red peppers, mushrooms, water packed artichoke hearts, scallion, shallots, firm fresh tomatoes, ripe olives, shredded carrot, and capers.
