whole meal flour

baking powder

dried mixed herbs

milk

vegetable oil

onions, sliced

cloves garlic, chopped

bran

chopped parsley

tomatoes, sliced

sugar

dried basil

green pepper, sliced into rings

mushrooms, sliced

stuffed green olives, sliced

low fat soft cheese

Cheddar cheese, grated

salt and ground black pepper

Method :
  1. Grease a baking tray.

  2. Sift together the flour, baking powder and salt, then add any bran remaining in the sieve and the herbs.

  3. Mix to a stiff dough with the milk.

  4. Roll out on a lightly floured surface and shape into a 20 cm round.

  5. Transfer to the baking tray.

  6. Heat the oven to 220oC (425oF), Gas 7.

  7. Heat the oil in a pan, fry the onions over moderate heat for 3 minutes, stirring occasionally, then add the garlic and fry for 1 minute more.

  8. Stir in the bran, parsley and one of the tomatoes and simmer for 2-3 minutes.

  9. Spread the onion mixture over the pizza and sprinkle with the sugar and basil.

  10. Arrange the remaining tomatoes, green pepper, mushrooms and olives in a pattern on top and season with salt and pepper.

  11. Cover with small spoonfuls of the low fat cheese, smooth for 25-30 minutes, until the base has risen and the topping is brown and bubbling.

  12. Serve very hot.
