Bacon and Almond Avocados Recipes

Ingredients :

4 oz unsmoked streaky bacon, finely chopped

2 hardboiled eggs, shelled, grated into a bowl

8 medium spring onions, trimmed, finely chopped

2 oz blanched almonds, skinned, toasted, chopped

1 tbsp stuffed olives, chopped

2-3 tbsp mayonnaise

2 large ripe avocados, halved, stones removed

Worcester sauce

lemon juice

strips of red pepper for garnishing

Method :
  1. Fry bacon in its own fat until crisp and golden brown.
  2. Remove from pan and drain on kitchen paper.
  3. Transfer to bowl.
  4. Mix in eggs, onions, almonds and olives.
  5. Season, add sufficient mayonnaise to bind mixture together.
  6. Halve avocados and pour 1/2 Worcester sauce into each hollow.
  7. Brush flesh all over with lemon juice to prevent discoloration.
  8. Pile egg mixture into each half then garnish.

Serves 4

Blessed with a sumptuous filling, these are a far cry from avocados with a simple French dressing!
