Clean the pork leg well and score
the skin.

Place in a saucepan and cover with
water.

Bring to boil and skim off the
scum.

Mix in all the remaining
ingredients, cover saucepan and simmer for 30 minutes.

Turn the pork over, cover and
simmer again for 2 hours or until pork is tender.

When gravy has reduced to half,
cook for a while longer until thick.

Remove pork from saucepan and place
on serving plate.

Slice thinly and then pour sauce
over.
