Method :
Heat oven to
350F (175C). Cut fat from chops and grease hot skillet with a piece of
it. Roll chops in flour and brown in skillet along with garlic. Season
with 1 tsp (5ml) salt and pepper. Combine parsley and 2 tbsp (30ml)
flour. Butter a 2-qt casserole and put 3 of the chops in it in a single
layer. Sprinkle with half of the flour-parsley mixture and top with half
of potato and onion slices. Repeat layers. Mix milk, 1.5 tsp salt and
mustard. Pour over all. Cover tightly and bake 90 minutes. Remove cover
last 30 minutes to brown.
