Method :
Melt the margarine in a large non-stick
omelets pan and fry the cooking apple, potato and bacon over medium
heat for 4-5 minutes, stirring frequently. Beat together the eggs, salt, pepper
and water. Pour into the pan and, using a
spatula, continually draw the cooked egg mixture form the sides of
the pan into the middle. When the underside is firm and the top
still runny, cook under a hot grill until the top is just set.
Cut into 4 wedges and serve topped
with the apple slices.
