Ginger Mango Dressing

2/3 cup
1 tsp |
lettuce, leaves washed and dried
pork fillet, baked and sliced into thin
medallions
stalks celery, sliced
mango, seeded, peeled and sliced
pineapple, peeled and chopped
mushrooms
hazelnuts, toasted
snipped chives
freshly ground black pepper, to taste
red apple, sliced and sprinkled with lemon
juice to prevent browning
mangoes, seeded, peeled and sliced
light mayonnaise

Method :
Line salad bowl with a few large
lettuce leaves. Teat the remaining leaves into
bite-sized pieces and mix with the rest of the salad ingredients
except for chives and pepper. To prepare dressing: Puree mango,
mayonnaise and ginger until smooth. Toss salad ingredients lightly with
dressing and arrange in salad bowl.
Top with snipped chives and a twist of
freshly ground black pepper. Serve as a main meal.
