Pork and Apple Baked Schnitzels Recipes

Ingredients :

4 pork schnitzels

1 large onion, sliced

100g rice

250ml boiling water

1 large carrot, peeled and sliced

2 large apples, peeled and sliced

4 large mushrooms, sliced

ground black pepper

1/2 tsp Chinese five spice powder

Method :
  1. Spray frying pan with non-stick cooking spray or wipe out pan with oil.
  2. Heat until very hot but not smoking.
  3. Add schnitzels to the pan.
  4. Brown both sides, about 5 minutes a side, turning once.
  5. Remove the meat, set aside.
  6. Add the onion to the pan and sauté in the juices left by meat.
  7. Spread out the rice in the bottom of a casserole.
  8. Pour over the boiling water.
  9. Place schnitzels, side by side, on top of the rice.
  10. Arrange layers of the cooked onion, carrot, apples and mushrooms.
  11. Sprinkle over the pepper and five spice powder.
  12. Cover and bake in a preheated oven for about 1 1/4 hours or until vegetables are tender.
  13. Serve hot, accompanied by a Mixed Green Salad.

This is the sort the dish you can assemble quickly and then put in the oven and leave it to cook while you attend to other things.
