Ingredients :

Grind ingredients to Paste (a):

tomato puree

evaporated milk

Siamese rice grains, washed

rosewater (available in Indian sundry shops)

spring onions

coriander leaves



pips garlic

mint leaves

coriander seeds




star anise

cinnamon stick

cardomon seeds

fennel seeds

cummin seeds

raisins and toasted cashew nuts for garnishing

Method :
  1. Heat margarine.
  2. Fry ingredients (a) until fragrant.
  3. Add ingredients (b) and stir well.
  4. Stir in tomato puree and evaporated milk.
  5. Add rice grains and mix well.
  6. Sprinkle rosewater all over the rice.
  7. Continue to stir well.
  8. Lower the heat and allow rice to cook.
  9. When rice is cooked, mix in spring onions and coriander leaves.
  10. Garnish with raisins and toasted cashew nuts.
  11. Ready to serve.

Serves 3-4
