Coriander Turkey Rice Recipes

Ingredients :

sunflower oil

shallots, chopped

cloves garlic, finely chopped

prosciutto, trimmed and cut into strips

long grain white rice, rinsed

ground coriander

Chinese Chicken Stock

asparagus, cut into 2.5 cm pieces, blanched

frozen green peas

cooked turkey, skinned and diced

chopped coriander leaves

salt and freshly ground black pepper

Method :
  1. Heat oil in a wok and stir fry shallots, garlic, ham, rice and ground coriander for 2 minutes.

  2. Season with salt and pepper.

  3. Pour in stock and bring to the boil.

  4. Reduce heat and simmer for 20 minutes.

  5. Gently stir in asparagus, peas, turkey and coriander and cook over low heat for 5 minutes or until heated through, stirring to prevent sticking.

  6. Serve immediately.

Serves 4
