Creamy Rice Recipe

Ingredients :

50g short grain rice

750ml skimmed milk

2 tbsp soft brown sugar

few drops of vanilla extract

grated nutmeg or cinnamon

Method :
  1. Wash the rice well.
  2. Drain and combine with the milk, sugar and vanilla.
  3. Turn mixture into a casserole.
  4. Bake in a preheated oven for 2 hours, stir occasionally during the first hour.
  5. Sprinkle the baked rice with grated nutmeg or ground cinnamon.
  6. Serve hot or cold as an accompaniment to Dried Fruit Compote.

To store - Keep cover in the refrigerator for up to 2 days.

To vary - Add 1 tbsp of finely grated lemon rind at step 1 and 2. Add 2 tbsp of sultanas at step 1 to 2. Before step 2, line the bottom of the casserole with slices of apple sprinkled with cinnamon, then spoon the rice mixture on top.

This is one of those wonderful 'nursery' desserts appreciated by children and adults alike. It is also a delicious way to stock up on the energy giving carbohydrates of rice and the protein and calcium found in skimmed milk - you might even try Creamy Rice for breakfast ! With a microwave oven, the dessert can be prepared in less than a quarter of the time.
