 Fish and Rice Ratatouille Recipes

Ingredients :

280g cooked rice

2 large fish fillets or cutlets (cod or halibut)

1 small green pepper, seeded and diced

2 small courgettes, diced

2 medium tomatoes, diced

6 large mushrooms, diced

1 small aubergine, diced

1 clove garlic, finely chopped

1/2 tsp dried mixed herbs

ground black pepper

juice of 1 lemon

Method :
  1. Spread the cooked rice over the bottom of casserole.
  2. Arrange fish on top of the rice.
  3. Combine all remaining ingredients, spoon over fish.
  4. Cover casserole dish with a lid or foil.
  5. Bake in a preheated oven for 30 minutes.

This delicious dish can be served hot or cold.

Serves 2 - 4
