Method :

  1. Cook 1/4 cup long-grain rice wit 1.5 cups water till tender; drain.

  2. Drain one 8.75-ounce can apricot halves reserving 2 tbsp syrup.

  3. Combine reserved syrup, cooked rice, 3 tbsp sweet orange marmalade, and 1 tbsp lemon juice.

  4. Spoon into 2-cup baking dish; top with apricots.

  5. Bake at 375° for 20 minutes.

Makes 2 servings
