Mushroom and Wild Rice Stuffing Recipes

Ingredients :

4 tbsp (1/2 stick) unsalted butter

1/2 pound or 1 4-ounce can sliced mushrooms

1/4 cup minced onion

1 tbsp minced flat leaf parsley

1/2 cup chopped celery

2 cups cooked wild rice

3/4 tsp salt

dash of pepper

Method :

In a large skillet, melt the butter until it sizzles. Add the mushrooms and sauce until tender, about 5 minutes. Remove the onions and set aside. Add the onions, parsley, and celery to the skillet and cook until the onions are tender. Stir in the rice, salt, pepper and the mushrooms. This recipe makes enough stuffing for a 4-5 pound chicken. You can also make stuffing with dried prunes and or apple slices.

Makes 2-4 servings
