Red Ribbon Rice Recipes

Ingredients :

1 1/2 cups water

1/2 cup raisins

1 tbsp nutritional yeast flakes

1 tsp fresh rosemary or 1/4 tsp dried rosemary

1 tsp minced garlic

1/2 tsp salt

1 cup white basmati rice

1 small red bell pepper, sliced into matchsticks

1/2 cup coarsely chopped walnuts

1 tbsp organic flaxseed oil (or extra virgin olive oil)

Method :
  1. Place the water, raisins, nutritional yeast, rosemary, garlic, and salt in a 2 quart or larger saucepan and bring to a boil.

  2. Stir in rice, cover, and simmer until almost all of the liquid has been absorbed, about 15 to 20 minutes.

  3. Remove from heat, stir up the rice so that the drier kernels on top are mixed with the wetter ones on the bottom. Cover and let stand for 5 minutes.

  4. Stir in bell pepper, walnuts, and oil, and toss gently until evenly distributed.

The rice dish is fragrant, festive and easy to prepare, making it ideal for every day or for entertaining.

Serves 4 - 6 as a side dish
