Thai Fried Rice Recipes

Ingredients :

long grain white rice

long beans, or French beans, cut into 2.5 lengths

vegetable oil

onions, finely chopped

cloves garlic, crushed

lean pork, very finely chopped

boneless, skinless chicken breast, very finely chopped

eggs, beaten

Nam Prik

fish sauce

cooked peeled prawns

coriander leaves, sliced spring onions and lime wedges, to garnish

Method :
  1. Cook rice.

  2. Add bean to a saucepan of boiling water and cook for 2 minutes.

  3. Drain and refresh under cold running water.

  4. Drain well.

  5. In a wok, heat oil, add onions and garlic and cook, stirring occasionally, until softened.

  6. Stir in pork and chicken and stir fry for 1 minute.

  7. Push to side of wok.

  8. Pour eggs into center of wok, leave until just beginning to set, then stir in pork mixture followed by nam prik, fish sauce and rice.

  9. Stir for 1-2 minutes, then add beans and prawns.

  10. Serve garnished with coriander leaves, spring onions and lime wedges.

Serves 4.
