Yellow Rice (Nasi Kunyit) Recipes

Ingredients :

peppercorns

screw pine leaves

coconut, grated

Method :
  1. Clean turmeric and pound till fine.

  2. Wrap in a piece of muslin and tie it up firmly.

  3. Wash the rice and soak in a bowl of water with the turmeric bag and tamarind for at least 3 hours.

  4. Preferably, soak the rice overnight.

  5. Rinse the soaked rice under running water and drain.

  6. Place the rice in a steamer with peppercorns and screw pine leaves and steam over boiling water for 20-30 minutes.

  7. Meanwhile, extract 1-11/2 cups thick coconut milk.

  8. Add in salt.

  9. When the rice is cooked, dish it into a large bowl and mix it with the thick coconut milk so that the rice grains are loosened.

  10. Return the rice to the steamer and steam for another 10 minutes.

  11. Serve with chicken curry, beef curry.
