crushed palm sugar

ground roasted peanuts

vegetable oil

cloves garlic, chopped

shallots, thinly sliced

dried red chili, seeded and finely chopped

coconut cream

French beans, very thinly sliced

Method :
  1. In a small bowl, mix together lime juice, fish sauce, sugar, nam prik, peanuts and 2 tablespoons water; set aside.
  2. In a small sauce pan, heat oil, add garlic and shallots and cook, stirring occasionally, until beginning to brown.
  3. Stir in chili and cook until garlic and shallots are browned.
  4. Using a slotted spoon, transfer to absorbent kitchen paper; set aside.
  5. In a small saucepan over a low heat, warm coconut cream, stirring occasionally.
  6. Bring a saucepan of water to the boil, add beans, return to the boil, add beans, return to the boil and cook for about 30 seconds.
  7. Drain and refresh under cold running water.
  8. Drain well.
  9. Transfer to a serving bowl and toss with shallot mixture and contents of small bowl.
  10. Spoon over warm coconut cream.

Serves 3-4
