fresh red chili, cored, seeded and chopped
cloves garlic, finely chopped
sesame oil
spring onions including green, very thinly
sliced

Method :

Bring a large saucepan of salted water to
the boil.

Add bean sprouts all at once.

Cover the pan and quickly return to
the boil.
-
Uncover the pan and boil for 30
seconds.
-
Tip bean sprouts into a colander
and rinse under running cold water.

Press bean sprouts gently to
squeeze out surplus water.
-
Transfer bean sprouts to a bowl.
-
Heat a small heavy frying pan.
-
Add sesame seeds and dry fry,
stirring, until fragrant and lightly browned.

Add to bean sprouts.
-
Add chili, garlic, sesame oil and
spring onions to bowl with bean sprouts.
-
Toss to mix ingredients thoroughly.
Serves 4 as a side dish
