Method :
- Soak the beans overnight in cold
water.
- Drain well, rinse and drain.
- Cover with fresh water, bring to
the boil and boil for 10 minutes.
- Cover and simmer for 40 minutes.
- Drain well.
- Poach the fish in a little salted
water until just cooked.
- Drain, skin and break into flakes.
- Drain the tuna and break into
flakes.
- Mix the white fish, tuna and
prawns with the beans.
- Mix the oil, vinegar, lemon juice,
tomato purée, lemon rind, Tabasco, salt and pepper to taste.
- Pour over the salad and toss
lightly.
- Leave to stand for 1 hour.
- Sprinkle with parsley and serve
cold.
This is a particularly delicious dish
served chilled for a summer meal, but it can be also be a refreshing
first course.
