Black Eye Seafood Salad Recipes

Ingredients :

100 g black eye beans

225 g white fish (haddock or cod)

200 g canned tuna in brine

100 g peeled prawns

1 small onion

6 tbsp oil

3 tbsp wine vinegar

juice of 1/2 lemon

2 tbsp tomato purée

1 tsp grated lemon rind

Tabasco sauce

salt and pepper

1 tbsp chopped fresh parsley

Method :
  1. Soak the beans overnight in cold water.
  2. Drain well, rinse and drain.
  3. Cover with fresh water, bring to the boil and boil for 10 minutes.
  4. Cover and simmer for 40 minutes.
  5. Drain well.
  6. Poach the fish in a little salted water until just cooked.
  7. Drain, skin and break into flakes.
  8. Drain the tuna and break into flakes.
  9. Mix the white fish, tuna and prawns with the beans.
  10. Mix the oil, vinegar, lemon juice, tomato purée, lemon rind, Tabasco, salt and pepper to taste.
  11. Pour over the salad and toss lightly.
  12. Leave to stand for 1 hour.
  13. Sprinkle with parsley and serve cold.

This is a particularly delicious dish served chilled for a summer meal, but it can be also be a refreshing first course.
