Brown Rice Fruit Salad Recipes

Ingredients :

brown long grain rice

apples

lemon juice

prunes, soaked

oranges, peeled and segmented

sunflower seeds

vegetable oil

low fat plain yoghurt

clear honey

unsweetened apple juice

ground black pepper

salt

Walnut halves (garnish)

Method :
  1. Cook the rice in plenty of boiling, salted water for 30-40 minutes, or until just tender.

  2. Drain in colander, refresh in cold, running water and drain thoroughly.

  3. Core and thinly slice the apples and toss in lemon juice.

  4. Drain, halve and stone the prunes and cut into quarters.

  5. Toss together the rice, fruit and sunflower seeds.

  6. To make the dressing, mix or shake together the oil, yoghurt, honey and apple juice and season with salt and pepper.

  7. Just before serving, pour the dressing over the salad and toss to coat the rice and fruit thoroughly.

  8. Garnish with the walnut halves.

Serves 4

Per Serving : 10 g fat, 4 g fiber.
