scallops, rinsed and deveined

lemon juice

lime juice

fresh oregano, chopped

large red onion, sliced

capsicum, seeded and chopped radicchio leaves

small cucumber, finely sliced

safflower oil

chopped fresh coriander

Method :

Rinse and drain scallops, toss in combined lemon and lime juice.

Add oregano, onion and capsicum, cover and refrigerate overnight.

Arrange radicchio leaves on serving plates.

Remove scallops with slotted spoon, reserve marinade and place scallops onto lettuce bed.

Arrange cucumber slices in salad.

Mix the marinade with the oil and coriander and pour over salad.

Serves 4
