scallops, rinsed and deveined
lemon juice
lime juice
fresh oregano, chopped
large red onion, sliced
capsicum, seeded and chopped radicchio
leaves
small cucumber, finely sliced
safflower oil
chopped fresh coriander |
Method :
-
Rinse and drain scallops, toss in
combined lemon and lime juice.

Add oregano, onion and capsicum, cover
and refrigerate overnight.

Arrange radicchio leaves on serving
plates.
-
Remove scallops with slotted spoon,
reserve marinade and place scallops onto lettuce bed.
-
Arrange cucumber slices in salad.
-
Mix the marinade with the oil and
coriander and pour over salad
Serves 4
