Chicken and Watercress Salad Recipes

cloves garlic, finely chopped

piece galangal, finely chopped

fish sauce

lime juice

crushed palm sugar

groundnut (peanut) oil

boneless, skinless chicken breast, finely chopped

dried shrimp

bunch watercress, weighing about 115 g, coarse stalks removed

chopped dry roasted peanuts

fresh red chilies, seeded and cut into fine strips

Method :
  1. Using a pestle and mortar, pound together garlic and galangal.
  2. Mix in fish sauce, lime juice and sugar; set aside.
  3. In a wok, heat oil, add chicken and stir fry for about 3 minutes until cooked through.
  4. Using a slotted spoon, transfer to absorbent kitchen paper to drain.
  5. Put into a serving bowl and set aside.
  6. Chop half of the dried shrimp and add to bowl.
  7. Mix in watercress, peanuts and half of chilies.
  8. Pour over garlic mixture and toss to mix.
  9. Sprinkle with remaining chilies and shrimp.

Serves 3-4
