Chicken Potato Salad with Thyme and Mayonnaise Recipes

chopped cooked chicken

zucchini, grated

chopped fresh thyme

baby potatoes, boiled and halved

red capsicum, cut into thin strips

chopped fresh coriander

hard-boiled eggs, peeled and sliced

low-joule French dressing

low-joule mayonnaise

Method :
  1. In a medium bowl, combine chicken, zucchini, thyme and potatoes, mix well.

  2. Arrange chicken mixture on serving plate, top with the red capsicum strips, coriander and egg slices.

  3. Pour over combined dressing and mayonnaise and serve chilled.
