Ingredients :

low fat cottage cheese, sieved

stoned dates, chopped

bunch watercress, trimmed

unsweetened orange juice

vegetable oil

bran

sesame seeds

salt and ground black pepper

few drops vanilla essence

4 heads chicory, trimmed and sliced

Method :

  1. Mix together the cottage cheese and dates and add 2 or 3 drops of vanilla essence.

  2. Line 4 individual bowls with the chicory then the watercress and spoon a mound of the date mixture into the middle.

  3. Mix or shale together the orange juice, oil, bran and sesame seeds and season with salt and pepper.

  4. Just before serving, spoon a little over the chicory and watercress and serve the rest separately.

Serving Suggestion :

As well as being a refreshing first course, this salad is a good accompaniment to barbecued or tandoori chicken, grilled steak or veal chops. Small amounts left can be piled into hollowed out tomatoes to make a colorful first course or part of a mixed salad plate.
