Mix together the cottage cheese and
dates and add 2 or 3 drops of vanilla essence.
Line 4 individual bowls with the
chicory then the watercress and spoon a mound of the date mixture
into the middle.
Mix or shale together the orange
juice, oil, bran and sesame seeds and season with salt and pepper.
Just before serving, spoon a little
over the chicory and watercress and serve the rest separately.
Serving Suggestion :
As well as being a refreshing first
course, this salad is a good accompaniment to barbecued or tandoori
chicken, grilled steak or veal chops. Small amounts left can be piled
into hollowed out tomatoes to make a colorful first course or part of a
mixed salad plate.
