Eight Treasure Salad Recipes

Ingredients :

Dressing :

lean cooked skinless turkey

red, 1 green and 1 yellow pepper

mange tout

oyster mushrooms

bunch spring onions

salted cashew nuts, crushed to garnish

 

sesame oil

white rice vinegar

honey

freshly ground pepper

Method :
  1. Cut turkey into 0.5 cm slices and arrange in the centre of 4 serving plates.

  2. Halve and seed peppers.

  3. Cut into thin slices and arrange around turkey.

  4. Diagonally slice mange tout.

  5. Shred oyster mushrooms and spring onions.

  6. Arrange on serving plates.

  7. Mix together sesame oil, vinegar, honey and pepper.

  8. Pour dressing over each salad, garnish with cashew nuts and serve.

Serves 4
