Fennel and Walnut Salad Recipes

Ingredients :

bulbs of fennel, trimmed

lemon juice

unsweetened orange juice

oil

dry vermouth

ground black pepper

walnuts, chopped

small lettuce, shredded

salt

ground black pepper

Method :
  1. Boil the fennel in salted water and lemon juice for 5 minutes.

  2. Drain thoroughly.

  3. Slice thinly into rings.

  4. Stir or beat together the lemon juice, orange juice, oil and vermouth and season with salt and pepper.

  5. Stir in the chopped walnuts and toss in the fennel.

  6. Just before serving, arrange the lettuce around the outside of a serving dish and pile the fennel in the center.

Serves 4

Per Serving : 10 g fat, 4 g fiber.
