Malaysian Fruit Salad Recipes

light brown sugar

small pineapple, peeled, cored and cubed

lychees, peeled, stoned and halved

ripe mangoes, peeled, stoned and chopped

papaya, peeled, seeded and chopped

grated zest and juice 1 lime

Method :

Put sugar, lime zest and juice and 150 ml water in a saucepan. Heat gently, stirring with a wooden spoon, until sugar has dissolved. Heat syrup to boiling point then simmer for 1 minutes. Remove form heat and leave to cool. Put pineapple, lychees, mangoes and papaya in a serving dish. Pour over cool syrup. Cover dish with cling film and put in the refrigerator to chill.

Serves 4
