Melon and Bean Salad Recipes

Ingredients :

honeydew melon

fresh bean sprouts

clove garlic, crushed

small red pepper, thinly sliced

cooked dried red kidney beans

spring onions, sliced

cashew nuts

chopped parsley

low fat plain yoghurt, chilled

lemon juice

grated rind and juice 1 orange

salt and ground black pepper

sprigs of watercress or parsley (garnish)

Method :
  1. Cut the melon in half and scoop out the seeds.

  2. Using a grapefruit knife with a curved blade, scoop out the melon flesh, then dice it.

  3. Or, with a fruit balling tool, scoop the melon flesh into balls.

  4. Mix the melon with the bean sprouts, garlic, red pepper, kidney beans, spring onions, nuts and parsley.

  5. Put the salad to chill in the refrigerator.

  6. Mix together the yoghurt, lemon juice and orange rind and juice.

  7. Season with salt and pepper, pour over the salad and toss well.

  8. Garnish with watercress or parsley sprigs.

Serves 4

Per Serving : 8 g fat, 16 g fiber.
