whole meal pasta shapes, example spaghetti rings

vegetable oil

cider vinegar

apples

lemon juice

stalks celery, thinly sliced

raisins

stoned dates, roughly chopped

walnuts, roughly chopped

low fat plain yoghurt, chilled

soured cream, chilled

unsweetened, orange juice, chilled

ground black pepper

salt

Method :
  1. Cook the pasta in a large pan in plenty or boiling salted water for 12-13 minutes, or according to the directions on the packet, until just tender.
  2. Drain thoroughly and toss, while still hot, with the oil and vinegar.
  3. Care and thinly slice the apples and toss them in the lemon juice.
  4. Stir in the celery, raisins, dates and walnuts, mix well, then toss in the cooked pasta.
  5. Mix together the yoghurt, soured cream and orange juice, season with salt and pepper, and pour over the salad.
  6. Toss to blend thoroughly.

Serves 4
