medium onion, peeled and sliced thinly
green capsicum (pepper), seeded and sliced
red capsicum (pepper), seeded and chopped
endive, washed and torn
cos lettuce, washed and torn
new potatoes, cooked and cied
finely chopped basil
can tuna, drained and flaked
anchovy fillets, chopped
black olives, halved
vinaigrette dressing
hard-boiled eggs, quartered
capers
Method :
Place vegetables in a large salad bowl. Toss to combine. Fork through the tuna, anchovies and olives. Pour over vinaigrette. Toss well. Serve salad chilled, garnished with capers and eggs.
