Summer Noodle Salad Recipes

Ingredients :

dried egg noodles

sesame oil

crunchy peanut butter

light soy sauce

sugar

tomatoes, thinly sliced

bunch spring onions, finely chopped

bean sprouts

large carrots, grated

pitted dates, finely chopped

pinch chili powder

Method :

  1. Cook noodles in boiling water for 4-5 minutes or until tender but firm to the bite.

  2. Drain well, rinse in cold water and set aside.

  3. Mix together sesame oil, peanut butter, soy sauce, sugar and chili powder.

  4. Drain noodles well, place in a large bowl and mix in peanut sauce.

  5. Arrange tomato slices on a serving plate.

  6. Using chopsticks or 2 forks, toss spring onions, bean sprouts, grated carrot and dates into noodles and mix well.

  7. Pile on top of sliced tomato and serve.

Serves 4
