Summer Tomato Salad Recipes

Ingredients :

3-4

8 ounces

1/4 cup

3 tablespoons

large ripe tomatoes

fresh mozzarella

extra-virgin olive oil

balsamic vinegar (or red wine vinegar)

handful of fresh basil leaves

salt and freshly ground black pepper

Method :

  1. Core the tomatoes and slice them thickly.

  2. Place on a large serving platter.

  3. Slice the mozzarella and distribute the pieces among the tomato slices.

  4. Tear the basil leaves off their stems and scatter them over the tomatoes.

  5. Drizzle the platter with olive oil and vinegar and sprinkle with salt and pepper.

  6. Serve at room temperature.

Serves 4

The fastest salad possible is sliced summer tomatoes topped with a few torn leaves of fresh basil. It's sheer indulgence to put slices of fresh mozzarella between the slices of tomato, but it's delicious, and make for a beautiful, impressive platter that only took you moments to make.
