Super Salad Recipe

Ingredients :

10-oz pkg plain yogurt

1/2 cup commercial mayonnaise

2 green onions, sliced paper thin

1/4 cup finely chopped parsley

1/3 cup finely crumbled blue cheese

1/3 cup slivered ripe olives

1/4 tsp salt

dash Tabasco

8-10 cups torn-up mixed salad greens

2 cups slivered cooked chicken

2 hard-cooked eggs, sliced

1/4 cup slivered pimento

Method :

Stir together yogurt, mayonnaise, onions, parsley, blue cheese, olives, salt and Tabasco. Put greens in a large bowl and add yogurt mixture. Toss lightly. Transfer mixture to 6-8 individual salad bowls. Top each serving with some of chicken, egg slices and pimento. Serve immediately.

Serves 6-8
