Swiss Peasant Cheese Salad Recipe

Ingredients :

2 cups 1/4 inch (0.5cm) cubes Swiss Emmentaler Cheese

3 cups sliced boiled new potatoes

1 1/2 cups 1-inch (2.5-cm) pieces cooked green beans

1/2 cup chopped Spanish onion

2 tbsp vinegar

1 tbsp prepared mustard

3 tbsp salad oil

2 tbsp mayonnaise

1/2 tsp salt

dash pepper


Method :

Combine cheese, potatoes, beans and onion in a large bowl and toss them together lightly. Blend remaining ingredients except lettuce and pour over cheese-potato mixture. Toss lightly to blend well. Chill several hours before serving. Serve on lettuce with crusty bread or pumpernicke as a complete lunch or supper.
