white rice vinegar
sugar
cooked, peeled large prawns, thawed and
dried, if frozen
large cucumber
sesame seeds
head Chinese leaves, shredded
fresh red chili strips and lemon wedges to
garnish |
Method :

In a large bowl, mix together chili
oil, peppercorns, salt, vinegar and sugar.

Add prawns and mix well.

Cover and chill for 30 minutes.

Thinly slice cucumber and slice
each piece into thin strips.

Pat dry with absorbent kitchen
paper and mix into prawns with sesame seeds.

Arrange Chinese leaves on 4 serving
plates and top with prawn mixture.

Garnish with chili strips and lemon
wedges and serve immediately.
