Thai Beef Salad Recipes

Ingredients :

lean beef, very finely chopped

fish sauce

lime juice

crushed palm sugar

long grain white rice, browned and coarsely ground

fresh green chilies, seeded and finely chopped

cloves garlic, finely chopped

Thai mint leaves

kaffir lime leaves, torn

Thai holy basil leaves

lettuce leaves, to serve

chopped spring onions and a chili flower, to garnish

Method :
  1. Heat a wok, add beef and dry fry for about 2 minutes until tender.
  2. Transfer to a bowl.
  3. In a small bowl, mix together fish sauce, lime juice and sugar.
  4. Pour over warm beef, add rice and toss together.
  5. Cover and leave until cold.
  6. Add chilies, garlic, mint, lime and basil leaves to bowl and toss ingredients together.
  7. Line a plate with lettuce leaves and spoon beef mixture into centre.
  8. Scatter over spring onions and garnish with a chili flower.

Serves 3-4
