small ugli fruit, segmented

fresh dates

small lettuce hearts

bunch watercress sprigs

tablespoons vegetable oil

piece preserved ginger, finely chopped

ginger syrup

lemon juice

salt and pepper

• Mix the dressing.

• Toss together the fruit, lettuce leaves and watercress sprigs.

• Just before serving, pour the dressing over the salad and toss well until each leaf glistens.
