Method :
  1. Slice 1 small onion and combine in a small pan with 1.25 cups milk, 1 bay leaf, 4 black peppercorns and 2 whole cloves.

  2. Bring the the boil over medium heat, then lower the heat and allow the mixture to simmer for 10 minutes.

  3. Strain into a large heatproof bowl and discard the onion and flavorings.

  4. Add 1.25 cups fresh breadcrumbs to the bowl with a pinch of ground nutmeg and 20g butter.

  5. Stir until smooth, then season to taste with salt and freshly ground black pepper, to taste.

  6. This sauce is traditionally served with roast turkey, goose or chicken.

Makes 1.25 cups (315ml)
