Chili Dressing Vietnamese Style Recipe

Ingredients :

small red chilies, chopped and seeded

garlic clove, chopped

caster sugar

vinegar

water

nuoc mam

pulp of half a lime

Method :
  1. Using a pestle and mortar, crush the chilies and garlic with the sugar.

  2. Add lime pulp and continue to blend.

  3. Mix the pulp with the rest of the ingredients; if you want a more cohesive mixture, transfer the mixture to a food processor fitted with a steel blade and blend.

If you follow this recipe, you will have enough dressing for at least two meals. It's always easy to double or triple the quantities if you want more. A good thing about it is its long life. It will keep in the refrigerator for several months as long as the container is kept tightly closed. Nuoc mam is a fermented fish sauce available from most Oriental food shops.
