Classic White Sauce Recipes

Ingredients :

1 pint milk

1 small onion, roughly chopped

1 bay leaf

2 oz butter

2 oz plain flour

salt and pepper

Method :

Put the milk, onion and bay leaf in a pan and heat until just boiling. Remove from the heat and set aside for 20 minutes, strain and set aside again. Melt the butter in a pan, stir in the flour and cook over a low heat for 1 minute. Remove from the heat and beat in the milk a little at a time until blended. Return to a low heat and stir constantly until thickened. Bring to a gentle boil, stirring all the time. Simmer for 2 minutes, season with salt and pepper.
