Put 4 cups fresh or frozen
cranberries, 1/2 cup sugar, 1/2 cup fresh or bottled orange juice,
the rind of 1 orange, 1 cinnamon stick and 2 tbsp of port in a
heavy-based saucepan.
Bring the mixture to the boil, then
reduce the heat and simmer for 5 minutes.
Remove the orange rind and cinnamon
stick, making sure you remove any small pieces that have broken away
from the stick, and cool before serving.
Store, covered, in the refrigerator
for up to a week.
