Ingredients :
2lb ripe tomatoes, skinned and roughly chopped
2 tbsp extra virgin olive oil
2 garlic cloves, chopped
2 tbsp chopped basil
1 tsp grated lemon rind
sugar
salt and pepper
Place all the ingredients in a saucepan and bring to the boil.
Cover and simmer gently for 30 minutes.
Remove the lid and simmer for 20 minutes until the sauce is thick.
Taste and adjust the seasoning.
