Neapolitan Sauce Recipes

Ingredients :

2 tsp water

1 clove garlic, crushed

500ml tomato purée

3 fresh basil leaves, finely chopped or good pinch of dried basil leaves

ground black pepper

2 tsp grated Parmesan cheese

Method :
  1. Heat the water in the saucepan until very hot.
  2. Add the garlic and simmer until tender.
  3. Add tomato purée, basil and black pepper to taste and stir.
  4. Simmer for 15-20 minutes, stirring occasionally.
  5. Spoon the hot sauce over cooked plain or whole meal spaghetti.
  6. Top with grated Parmesan cheese.

To vary - To the completed sauce add: 4 black olives, pitted and halved, 4 tbsp of tuna, or diced cooked chicken.

To store - Covered, in the refrigerator for up to 3 days.

Serves 4 - 6
