Pesto Recipes

Ingredients :

2 oz pine nuts

2 garlic cloves, crushed

2 oz basil leaves

5 oz Parmesan cheese, freshly grated

2 tbsp lemon juice

1/4 pint olive oil

salt and pepper

Method :
  1. Put the pine nuts and the garlic into a mortar and pound the mixture to a thick paste.

  2. Alternatively, use a food processor or blender.

  3. Teat the basil leaves into shreds and add to the pine nut mixture.

  4. Continue pounding or processing until you have a thick green paste.

  5. Transfer to a bowl.

  6. Stir in the Parmesan and the lemon juice.

  7. Add the olive oil, a little at a time, beating well.

  8. Season to taste.
