Method :
- Heat the oil in a pan.
- Add the onion and garlic clove and
sauté for 5 minutes.
- Add the flour and cook for 1
minute.
- Stir in the tomato ketchup,
passata, sugar and fresh parsley.
- Bring to the boil.
- Chill and use as required.
A cooked relish which may be served hot
or cold. It has a concentrated tomato flavor, making it ideal with
pasta or burgers.
